Éclairs
Ingredients:
- 250ml water
- 115g butter (cut into cubes)
- 200g flour
- 1tbsp sugar
- 1 pinch salt
- 4 eggs
Method:
- Preheat your oven to 200'c
- Firstly, pour the water into a saucepan and then add the butter and heat until all the butter has melted.
- Whilst this is melting, mix the flour, sugar and salt together.
- When the butter has melted, take the pan off the heat and add the flour mix.
- Keep stirring this vigorously until it all combines into a ball.
- Put this dough back on the heat and keep stirring for 1-2 minutes, just to cook off the flour.
- Take off the heat and leave to cool for 3 minutes
- Mix all of your eggs together and then once the mixture is cool and the eggs a little bit at a time and mix until the dough and egg are completely combined.
- Keep adding the egg until the mixture is thick, but still drops off the spoon quickly.
- Then pop the mixture into a piping bag and pipe some slug looking thick lines onto a baking tray lined with baking paper.
- cook in the oven for half an hour, or until they are golden brown and puffed up.
- When cooled, whip up some cream and use a knife to make a small hole in the éclair. Then pipe the inside with cream.
- Melt some chocolate in the microwave, 10 seconds at a time until it is melted and then dip the top of the éclair in.
