Pizza Shortbread: Baking

  AMAZING PIZZA SHORTBREAD
 

 
 
This week I decided to mix two of my favourite things together and make shortbread that looks like pizza. Amazing I know! This was sooo much fun to make and although it didn't turn out exactly how I wanted it to, I was still impressed with the result. Plus it tastes amazing.
So if you have a sweet tooth like me and want to know how to make this, keep reading!
 

Ingridients:

  • 250g butter
  • 125 sugar
  • 250g pl flour
  • 125g semolina/ cornflour
 
 
 

Method:

Preheat your oven to 150°c
  • Firstly, cream the butter and sugar together until, well, creamy.
  • Then sift the flour and semolina in and mix until it is all combined. Don't worry if it doesn't come to a dough, just make sure all the butter is incorporated with the dry ingredients.
Semolina is the hard grains left from the milling of flour. This will give the shortbread a good texture.
 
  • Then split the mixture between two greased cake tins and then press the dough down so it is compact.


 
  • Sprinkle some extra sugar over the top and cook in the oven for 53 minutes or until the shortbread is golden.
  • Once they are cooked, cool for 10 minutes, then gently cut the circles into pizza slices. Leave them in the tin to cool for 40 minutes or so.
  • Then mix together some icing sugar with water (only a few drops until you get the consistency of golden syrup)
  • Colour half of this red (tomato puree) and leave the other white (mozzarella)
  • Spread the red around the edges of the 'pizza' crust and then drizzle the white over the rest. Decorate with some red coloured sugar and some white chocolate chips. You can also make other toppings such as meat feast (milk chocolate pieces) or peppers (green coloured fondant)
